This is a perfect weekend starter. It’s simply beautiful and delicious and really easy to make.. I present to you my seafood curry with steamed basmati rice. Yaaaaas😀😀😀
- About 3 cups of basmati rice ( can serve 6 persons)
- Fish of your choice, fried or grilled
- Fresh shrimps
- Snails cut in two
- Diced sausages
- Chopped fresh tomatoes
- Ground ginger and garlic
- Black pepper
- Chopped onions
- Chopped carrots
- Chopped green bell peppers only
- Chopped green beans
- Seasoning cubes
- Cocunut oil
- Cocunut milk
- About 2 table spoon of flour to thicken
- Salt to taste .
Add cocunut oil in a pot or pan, when hot add onions, stir and add chopped tomatoes, add curry with thyme and coriander, stir and allow to sit for a minute. Add a cup of water, add flour to thicken. Stir to make sure flour dissolves properly, add washed snails, add seasoning cubes and a pinch of salt with black pepper. Now let this cook for a few minuites.
Back to our sauce, hope it’s not too thick? Or too flooded cuz we don’t want that. Now add ground garlic and ginger, stir add about 2 cooking spoon of cocunut milk, add shrimps and diced sausages and stir. At this point you can add more curry if you prefer I don’t add toomuch, ok so everything looks delicious already, stir and add fried or grilled fish, throw in all the veggies, ( carrots beans and green pepper) I always do that, throw in some fresh rosemary, taste for salt, you can add more seasoning in pepper if you like spicy food. Now stir carefully because you want your fish firm and intact.
Steam basmati rice in boiling water and throw in a few pinches of salt and a spoon of cocunut milk, sieve after 8 minutes, drain and serve hot with your delicious seafood curry sauce. Place some kale to make it look pretty and enjoy.
